This is the most refreshing drink EVER. Oh my gosh, I can’t even tell you how much I love it. I grew up drinking lemonade ALL the time, and I honestly haven’t had it in years and years until I made this the other day. It brought back so many nostalgic memories of drinking lemonade in the summers, and I can’t wait to bring back the tradition with this amaaaazing beverage. Can you tell I like it?
Another lovely thing about this, is that it’s sweetened with honey instead of sugar! It gives a slight floral sweetness and goes so well with the lemon.
All you do is make a simple syrup by boiling honey and water until dissolved, and then add some mint leaves! SO GOOD.
Also, do you guys remember the frozen containers of lemonade that you mix with water and they’re loaded with sugar but taste freaking amazing? Yes, that’s what I grew up on. I have absolutely nothing against real sugar from time to time, but it’s nice to have a honey sweetened version too!
As my mom and I were drinking this, we said at the same time “This would be SO good with vodka!” So yeah. Do it.
Or your alcohol of choice! If you’re a gin person, it would probably be good with gin too!
The watermelon part of this lemonade comes from puréeing fresh watermelon chunks and straining it through a fine mesh sieve to yield fresh watermelon juice! I think I wanna make margaritas with it next. Or just drink it straight up. Who else loves watermelon?!
I had this freshly squeezed watermelon juice at a Mexican restaurant in NYC with my best friend this past winter, and I knew I had to make something similar to it when summer came around. And here we are!
So ready for summer nights outside with this lemonade. Annnnd vodka.
Watermelon Mint Lemonade
This watermelon mint lemonade is SO refreshing for summer and it's sweetened with a honey mint simple syrup instead of sugar!
Ingredients
- 3/4 cup water
- 3/4 cup honey
- 8 mint leaves, plus extra for serving
- 6 cups fresh watermelon chunks
- 1 cup freshly squeezed lemon juice (from about 8 or so large lemons)
Instructions
Add water and honey to a small saucepan. Bring to a boil. Stir constantly until honey is dissolved. Remove from heat and add mint leaves. Let cool completely.
Add watermelon to a blender and purée until smooth. Strain watermelon juice through a fine mesh sieve into a large bowl or pitcher. Discard the "pulp".
Add the lemon juice and cooled honey mint syrup to the watermelon juice. Add to a pitcher and stir in a handful of mint leaves, maybe 8-10. Serve over ice and enjoy!
