Greek yogurt curry dip! And lots of spring veggies makes my vegetable loving soul oh-so-happy. After a little too much cheese, cookies, and wine this weekend, I am ready to eat the leftovers from this beautiful tray all week!
I first tasted a similar recipe at a friends house a couple months ago. It was INSANELY delicious but contained a lot of mayonnaise and sour cream. Don’t get me wrong, they both have their time and place, but I wanted to make a lightened up version! And here we are.
I still added a little bit of mayo and sour cream for that touch of richness, but otherwise this dip is all plain Greek yogurt! One of my favorite swaps of all time. Exhibit A. My favorite lightened up BBQ chicken dip. I ate a ton of it this weekend. I cannnnnot get enough.
Something I love doing when making a veg tray for entertaining: blanching the green veggies. Just boil them for 30 seconds to a minute, and transfer them to an ice bath to stop cooking. They get so VIBRANT and beautiful! They really take the beauty of your veggie platter to the next level.
See?
To the dip I added a little honey, curry powder of course, and fresh ginger. It’s literally 6 ingredients and has SO. MUCH. FLAVOR. Thanks to the curry and ginger! Such flavor powerhouses.
I used some of my favorite spring veggies here: cucumber, heirloom carrots, peppers, easter egg radishes (yes, they’re a thing!!), snow peas, and asparagus. But feel free to use whatever you like!
This is 100% happening for Easter snacking!
