These Cucumber Melon Gin Spritzers are the most refreshing summer cocktail! They’re made with a cantaloupe simple syrup, fresh mint, sliced cucumber, gin of course, and a splash of soda water!
Get ready for the most refreshing summer cocktail. Cantaloupe infused simple syrup, gin, cucumber slices, melon balls, mint, and seltzer come together in the most beautiful way. I almost always go for tequila based drinks, and sometimes vodka, but this one is changing my tune. I can’t get over how good it is!
This beauty of a drink is so light and summery and perfect for entertaining, barbecues, and straight up relaxing. If it would ever stop raining here in Baltimore, I’d love to enjoy one of these outside or at the pool!
This recipe is for one cocktail, but they are super easily multiplied. The recipe makes a ton of simple syrup, so you can definitely make these for a crowd!
This simple syrup is SO amazing. And simple. Ha. No really, it’s incredibly easy for an “infused” simple syrup. All you have to do is make a plain simple syrup (by boiling sugar + water), and then purée it in your food processor or blender with fresh cantaloupe!
It’s incredible, and even more incredible if you get a suuuuper ripe and sweet cantaloupe.
When I was testing and shooting these cocktails, I’m so glad I wasn’t home alone. My mom was here to help me drink them all, thankfully. We were stuck with about 6-7 drinks to consume at 10am. It would’ve been a litttttle bit dangerous if I was here by myself. They’re tooooo good.
The other thing I love about these is how the simple syrup is kind of thick, almost like a fruit purée from the cantaloupe. The only thing about that, is that it’s sometimes hard to pour out of the shaker because the fruit pieces and/or mint leaf gets stuck and blocks it from coming out! So you might have to take off the lid of your shaker and pour the cocktail into your glass if you want to get all the goodness in!
I love making melon balls instead of just cutting cantaloupe into cubes for these because it’s extra pretty! But you can totally just cut them into cubes if you don’t have a melon baller.
Another thing I love doing with these is using cucumber flavored seltzer if I have it. It’s SO good and adds more fresh cucumber-y goodness to these drinks! Totally optional, but if you can find it, definitely use it. 😍
But yes, if you want to make these for a crowd, you absolutely can. This simple syrup makes a lot of extra! This is the kind of drink that begs to be entertained with. All I can think of when drinking these is pairing it with lots of good barbecue and all the grilled things!
I’m so ready for Friday summer happy hours. 🙌🏻
Cucumber Melon Gin Spritzers
Ingredients
For the melon simple syrup
- 1 c. water
- 1 c. sugar
- 2 c. cantaloupe cubes or balls
For the cocktail
- 2 oz. melon simple syrup
- 1.5 oz. gin
- 1 oz. seltzer water*
- melon balls/cubes
- cucumber slices
- ice
- fresh mint
Instructions
In a small saucepan, bring the water and sugar to a boil. Let boil for 30 seconds, remove from heat, and let cool completely. Once cooled, add to a blender or food processor with the cantaloupe cubes/balls. Blend until completely smooth.
To make the drink, add ice to a cocktail shaker along with a fresh mint leaf. Add the simple syrup and gin, and shake for 30 seconds. Fill glass with ice, a few melon balls and cucumber slices, and then pour in the drink. Top with seltzer, stir to combine, and garnish with mint, and extra cantaloupe/cucumber slices!
Recipe Notes
*Becasue of the thickness of the simple syrup, the cocktail is sometimes hard to pour out of the shaker because the puréed cantaloupe syrup and/or mint leaf gets stuck and blocks it from coming out! You might have to take off the lid of your shaker and just pour it into your glass if you want to get all the goodness in!
*If you can find it, cucumber flavored seltzer is amazing in these!
*This recipe makes a bunch of extra simple syrup, so these are great to serve to a crowd too!
