I’ve been obsessing over all things smoothie bowl lately. A new juice bar opened up near me and they have the most gorgeous acai and pitaya bowls, fresh pressed juices, and other healthy vegan and gluten free breakfast items. The bowl I had there was different than this one, but I recently bought cacao powder to make my mom a raw vegan cake for her birthday. I had a ton leftover, so I thought of the cacao + blueberry combo and it is TO DIE FOR. Feels like your having dessert but this bowl is so full of antioxidants, fiber, iron, potassium and polyphenols. It can double as a super healthy dessert too!
Blueberry Cacao Acai Bowls
Ingredients
- 1 frozen acai packet (I get the Sambazon brand from Whole Foods)
- 1/2 c. frozen blueberries
- 1 small banana, previously sliced and frozen
- 1 T. cacao powder
- 3/4 c. -1 c. unsweetened vanilla almond milk (I used about 3/4 c. + 1 T.)
- TOPPINGS:
- sliced banana
- freeze dried blueberries
- fresh blueberries
- cacao nibs
- hemp seeds
Instructions
- Add acai packet, frozen blueberries, frozen banana, cacao powder, and almond milk to blender. Start with 3/4 c of almond milk and only add more if the blender needs it. The less liquid you can add, the better, so the smoothie will be super thick and perfect for eating with a spoon! Blend for a few minutes or until smooth and creamy.
Add to a bowl and top with banana, freeze dried blueberries, fresh blueberries, cacao nibs, and hemp seeds. Serve immediately!
