I know what you’re thinking. “Granola and brie?!…and this seems like a fall/winter appetizer.” You gotta trust me on this one though. This combo is AMAZING and so worth the 12-15 minutes your oven has to be on. I’m all about the fresh fruit and cheese combos during the summer, but it’s always fun to have something different and WARM. There’s something about ooey gooey melty cheese that can’t be topped.
What I love about this savory granola (that’s actually kind of sweet from the honey), is that it’s made on the stovetop! Minimal oven use required during this crazy heat wave.
The granola ends up being a little sticky, full of fresh, herby flavor and sweet honey. This helps it stick to the cheese better!
I used a triple creme Brie which made this extra decadent. Feel free to use your favorite kind though! I also paired this with apple slices, Thomcord grapes (a cross between Thompson and Concord grape varieties..they seriously taste like Welch’s!), a french baguette, and some of my favorite crackers. So freaking good.
This is the perfect recipe to entertain with, or bring to someones house. Make the granola ahead of time, have all your apples and crackers ready, and then just bake the Brie once you are ready to serve, and top with the granola! So simple.
I promise you won’t regret turning your oven on. š
Baked Brie with Honey Rosemary Thyme Granola
Ingredients
- For the GRANOLA:
- 1/2 c. oats
- 1/4 c. sliced almonds
- 1 T. olive oil
- 1/4 tsp. salt
- 2 tsp. chopped fresh rosemary
- 2 tsp. chopped fresh thyme
- 1 T. honey (I used Wedderspoon's raw dandelion honey)
- For the BRIE:
- 1 (8'') wheel of Brie (I used a triple creme variety)
- 2 tsp. brown sugar
- 1 tsp. honey
- extra honey for drizzling
- your favorite crackers
- French baguette
- apple slices
- grapes
Instructions
- Preheat a nonstick skillet to medium heat. Add the olive oil, oats, and almonds, and toast for 4-5 minutes until golden, stirring frequently.
- Add the salt, rosemary, thyme, and honey, and lower the heat. Cook for an additional 5 minutes, stirring frequently. Remove from heat and pour granola into a single layer onto parchment to cool.
Preheat oven to 350ā. Put brie in a medium cast iron skillet or glass baking dish. Sprinkle top evenly with brown sugar and drizzle with honey. Bake for 12-15 minutes or until soft and bubbly, and the cheese starts to ooze out from the sides. Let rest for 5 minutes. Top with granola and an extra drizzle of honey if desired.
